- 1½ pounds (720 g) diced beef
- 3/4 pound (360 g) potatoes, peeled and diced
- 1 yellow onion, peeled and sliced
- 7 oz (210 g) massaman curry paste
- 1²⁄³ cups (400 ml) chicken stock
- 2 cups (500 ml) coconut cream
- 2 tablespoons fish sauce
- freshly squeezed juice of 1/2 lemon
- 1 tablespoon light brown sugar
- 1 bay leaf
- 2-3 nutmegs
- dash of roasted peanuts
