Slow cooker black bean salsa chicken. Chicken breasts with salsa and black beans cooked in slow cooker.
- 4 boneless and skinless chicken breasts
- 1/2 cup (125 ml) chicken broth
- 1 cup 9250 g) salsa
- 1 cup (250 g) frozen corn
- 15 oz (450 g) can black beans,drained and rinsed
- 1 ¼ oz (38 g) taco seasoning
- 1/2 cup (125 g) sour cream
- 1 tablespoon cornstarch
- 1 tablespoon water
- grated cheddar cheese
- diced tomatoes
In a slow cooker,combine chicken breasts,chicken broth,salsa,corn,drained beans and taco seasoning. Stir well. Cover slow cooker and cook on low heat setting for 4-6 hours.
Remove cooked chicken breasts from slow cooker. Transfer to serving platter. Using two forks , shred chicken into bite-size pieces. stir in the sour cream.
In a small mixing bowl,combine cornstarch and 1 tablespoon of water. Stir until smooth. Stir cornstarch mixture into slow cooker mixture.
Put shredded chicken back in slow cooker. Cook,opened,on high-heat setting for 30 minutes.
Spoon the chicken mixture over tortillas and sprinkle with cheese and diced tomatoes. Serve immediately.
