Slow Cooker Black Bean Salsa Chicken


  • 4 boneless and skinless chicken breasts
  • 1/2 cup (125 ml) chicken broth
  • 1 cup (250 g) salsa
  • 1 cup (250 g) frozen corn
  • 15 oz (450 g) can black beans,drained and rinsed
  • 1 ΒΌ oz (38 g) taco seasoning
  • 1/2 cup (125 g) sour cream
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • tortillas
  • grated cheddar cheese
  • diced tomatoes


Step 1

In a slow cooker, combine chicken breasts, chicken broth, salsa, corn, drained beans, and taco seasoning. Stir well. Cover slow cooker and cook on low heat setting for 4-6 hours.

Step 2

Remove cooked chicken breasts from slow cooker. Transfer to serving platter. Using two forks, shred chicken into bite-size pieces. Stir in the sour cream.

Step 3

In a small mixing bowl, combine cornstarch and 1 tablespoon of water. Stir until smooth. Stir cornstarch mixture into slow cooker mixture.

Step 4

Put shredded chicken back in slow cooker. Cook, opened, on high-heat setting for 30 minutes.

Step 5

Spoon the chicken mixture over tortillas and sprinkle with cheese and diced tomatoes. Serve immediately.
