Slow cooker brandied onion soup.An excellent onion soup with brandy and beef broth cooked in slow cooker.Very easy and delicious!

Variation:Onion and Potato Soup-make recipe as below,adding 2-3 cups peeled and cubed potatoes,1/4 teaspoon dried marjoram and 1/4 teaspoon dried thyme leaves. Sprinkle each bowl with shredded Parmesan or Swiss cheese.

Ingredients

  • 4 cups thinly sliced frsh onions
  • 4 cups (2L) beef broth
  • 2-4 tablespoons brandy
  • salt and freshly ground black pepper

Method

Step 1

In a slow cooker,combine onions,beef broth. Mix well.

Step 2

Cover slow cooker and cook on low-heat setting for 6-8 hours.

Step 3

Turn off slow cooker.

Step 4

Stir in brandy. Season to taste with salt and black pepper.

Step 5

Ladle into soup bowls. Serve immediately.
