Variation:Onion and Potato Soup-make recipe as below,adding 2-3 cups peeled and cubed potatoes,1/4 teaspoon dried marjoram and 1/4 teaspoon dried thyme leaves. Sprinkle each bowl with shredded Parmesan or Swiss cheese.
- 4 cups thinly sliced frsh onions
- 4 cups (2L) beef broth
- 2-4 tablespoons brandy
- salt and freshly ground black pepper
In a slow cooker,combine onions,beef broth. Mix well.
Cover slow cooker and cook on low-heat setting for 6-8 hours.
Turn off slow cooker.
Stir in brandy. Season to taste with salt and black pepper.
Ladle into soup bowls. Serve immediately.
