Slow Cooker Caldo de Pollo Soup Recipe
Ingredients
- 8 cups (2 L) low-sodium chicken broth
- 1 cup uncooked rice
- 3/4 pound (360 g) coooked and shredded chicken
- 2 large carrots, peeled and diced
- 1 large yellow onion, peeled and diced
- 3 cloves garlic, peeled and minced
- frshly squeezed juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- chopped fresh cilantro
Method
Step 1
In a 6-quart (6 L) slow cooker, combine all ingredients, except fresh cilantro. Stir well.
Step 2
Close the pot and cook on low-heat setting for 8 hours.
Step 3
Turn off the cooker and open the lid. Stir soup well before serving.
Step 4
Ladle into soup bowls. Sprinkle each bowl with chopped fresh cilantro. Serve hot.
