Slow cooker caldo de Pollo soup recipe. Very easy and tasty homemade Mexican chicken, rice and vegetable soup. You may also like Slow Cooker German Potato Soup

Slow Cooker Caldo de Pollo Soup Recipe

Ingredients

  • 8 cups (2 L) low-sodium chicken broth
  • 1 cup uncooked rice
  • 3/4 pound (360 g) coooked and shredded chicken
  • 2 large carrots, peeled and diced
  • 1 large yellow onion, peeled and diced
  • 3 cloves garlic, peeled and minced
  • frshly squeezed juice of 1 lime
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • chopped fresh cilantro

Method

Step 1

In a 6-quart (6 L) slow cooker, combine all ingredients, except fresh cilantro. Stir well.

Step 2

Close the pot and cook on low-heat setting for 8 hours.

Step 3

Turn off the cooker and open the lid. Stir soup well before serving.

Step 4

Ladle into soup bowls. Sprinkle each bowl with chopped fresh cilantro. Serve hot.
