Ingredients

  • 1/2 pound (240 g) Italian sausage,casings removed
  • 1 large carrot, pelled and chopped can sliced mushrooms
  • 19 oz (570 g) package uncooked cheese tortellini
  • 1 cup (250 g) chopped red bell pepper
  • 10 oz (300 g) fresh spinach leaves
  • 1 tablespoon olive oil

Method

Step 1

Heat the olive oil in a large nonstick skillet. Add sausages and cook over medium-high heat until browned.

Step 2

Remove cooked sausages from the skillet and transfer to a slow cooker. Add remaining ingredients, except tortellini. Cover the pot and cook on a low-heat setting for 6-8 hours.

Step 3

Stir in tortellini. Cover the slow cooker and cook on low -heat setting for a further 15 minutes.
