Slow Cooker Chicken Stew with Vermouth

Ingredients

  • 3 pounds (1.44 kg) skinless and boneless chicken breasts and thighs, cubed
  • 3/4 cup (180 ml) low-sodium fat-free chicken broth
  • 1/2 cup (125 ml) dry vermouth
  • 4 carrots, peeled and chunked
  • 4 oz (120 g) sliced mushrooms
  • 1 large yellow onion, peeled and thinly sliced
  • 2 ribs celery, sliced
  • 1 teaspoon minced garlic
  • salt and freshly ground black pepper to taste

Method

Step 1

Combine all ingredients, except seasoning, in a slow cooker. Cover and cook on low heat setting for 6-8 hours.

Step 2

Turn off the pot and open the lid. Season to taste with salt and freshly ground black pepper.

Step 3

Ladle chicken stew into soup bowls. Serve hot.
