Slow Cooker Chicken Stew with Vermouth
Ingredients
- 3 pounds (1.44 kg) skinless and boneless chicken breasts and thighs, cubed
- 3/4 cup (180 ml) low-sodium fat-free chicken broth
- 1/2 cup (125 ml) dry vermouth
- 4 carrots, peeled and chunked
- 4 oz (120 g) sliced mushrooms
- 1 large yellow onion, peeled and thinly sliced
- 2 ribs celery, sliced
- 1 teaspoon minced garlic
- salt and freshly ground black pepper to taste
Method
Step 1
In a slow cooker, combine all ingredients, except seasoning. Cover the pot and cook on low heat settings for 6-8 hours.
Step 2
Turn off the pot and open the lid. Season to taste with salt and freshly ground black pepper.
Step 3
Ladle chicken stew into soup bowls. Serve hot.
