Slow cooker chicken stew with vermouth. Chicken breasts and thighs with vegetables and vermouth cooked in slow cooker.The flavor of dry vermouth adds a touch of elegance to this delicious stew.

Ingredients

  • 3 pounds (1.44 kg) skinless chicken breasts and thighs
  • 3/4 cup (180 ml) low-sodium fat-free chicken broth
  • 1/2 cup (125 ml) dry vermouth
  • 4 potatoes,peeled and cubed
  • 4 carrots,peeled and thckly sliced
  • 4 oz (120 g) sliced mushrooms
  • 1 large yellow onion,peeled and thinly sliced
  • 2 ribs celery,sliced
  • 1 teaspoon minced garlic
  • salt and freshly ground black pepper to taste

Method

Step 1

Combine all ingredients,except seasoning,in slow cooker. Cover and cook on low heat setting for 6-8 hours.

Step 2

Season to taste with salt and freshly ground black pepper.
