  • 1 teaspoon garlic-infused oil
  • 1 pound (480 g) boneless and skinless chicken thighs
  • 1 tablespoon mild curry powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 2 cups (500 ml) gluten-free chicken stock
  • 1 oz (30 g) creamed coconut block
  • 1 bay leaf
  • 1Β½ tablespoons cornflour mixed with 3 tablespoons water
