Slow Cooker Creamy Chicken Chowder Recipe

Creamy and spicy chicken cooked in a slow cooker. Reach of protein and very delicious Mexican recipe.

Makes 6 servings

Ingredients: 1 pound (480 g) skinless and boneless chicken breast halves, cut into 1/2-inch (1.25 cm) pieces, 11 oz (330 ml) can whole-kernel corn with sweet peppers, drained, 10¾ oz can (320 ml) condensed cream of potato soup, 4 oz can (120 ml) diced green chile peppers, undrained, 1¼ oz (37 ml) envelope taco seasoning mix, 2 tablespoons (30 ml) snipped fresh cilantro, 3 cups (750 ml) reduced-sodium low-fat chicken broth, 8 oz carton (240 ml) sour cream, half of an 8 oz package (240 ml) pasteurized prepared cheese product with jalapeno chile peppers, cut into cubes

Instructions: Lightly grease 4-quart (4 L) slow cooker with nonstick cooking spray. In the greased pot, combine cubed chicken, corn, condensed soup, taco seasoning mix, and snipped fresh cilantro. Mix well, then stir in chicken broth.

Cover the slow cooker and cook on low-heat setting for 4-6 hours, or until chicken is cooked through.

Turn off the slow cooker and open the lid. Gradually stir about 1 cup (250 ml) of the hot mixture into sour cream and return this creamy mixture to the cooker. Add cubed cheese with jalapeno chile peppers. Cover slow cooker and let stand for 5 minutes, or until cheese has melted. Stir with a whisk until well combined.

Ladle creamy chicken chowder into soup bowls. Serve hot with crusty bread.

Slow Cooker Creamy Broccoli-Chicken Recipe

Ingredients

  • 4 boneless and skinless chicken breasts
  • 14 oz can (420 ml)cream of chicken soup
  • 14 oz can (420 ml) cheddar soup
  • 14 oz can (420 ml) chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon Cajun seasoning
  • 1/4 teaspoon garlic salt
  • 1 cup (250 ml) sour cream
  • 4 cups (2L) fresh broccoli florets
  • 1 cup (250 ml) shredded cheddar cheese

Method

Step 1

In a greased slow cooker, combine cream of chicken soup, cheddar soup, chicken broth, Cajun seasoning, and garlic salt. Mix well. Place chicken breasts on the bottom of the pot.

Step 2

Cover the slow cooker and cook on low-heat setting for 4-6 hours. The last 30 minutes of cooking, open the lid, then shred the chicken with two forks and add the remaining ingredients. Cover and cook for further 30 minutes, or until the broccoli is tender and heated through.

Step 3

Turn off the slow cooker and open the lid. Stir creamy chicken mixture well before serving. Serve over cooked rice.
