Slow Cooker Garden-Vegetable Beef Stew Recipe

Beef with vegetables and herbs cooked in the slow cooker. For the best flavor, use fresh herbs and vegetables.

Makes 6 servings


Ingredients: 3 medium potatoes, peeled and chunked, 4 medium carrots, peeled and chunked, 1 leek, cut into pieces, rinsed, 1 pound (480 g) lean beef stew meat, cut into cubes, 1 red bell pepper, seeded and cut into pieces,2 cups frozen green beans, thawed, 1 (14½ oz (435 ml)) can beef broth, 2 tablespoons chopped fresh parsley, 1 teaspoon chopped fresh marjoram, 1 teaspoon chopped fresh oregano, 1/2 teaspoon salt, 1/8 teaspoon freshly ground black pepper, 2 teaspoons Worcestershire sauce, 3 tablespoons cornstarch, 3 tablespoons cold water

Instructions: In a 3½-quart (3½ L) slow cooker, combine potatoes, carrots, and leek. Top with cubed beef, bell pepper, and green beans.

In a small mixing bowl, combine beef broth, parsley, marjoram, oregano, seasoning, and Worcestershire sauce. Pour beef broth mixture over beef and vegetables in a slow cooker. Cover cooker and cook on low-heat setting for 8-10 hours, or until beef is tender.

Switch the heat to high. In another small mixing bowl, combine cornstarch and water. Mix until cornstarch dissolved completely. Open slow cooker and stir cornstarch mixture into vegetable-beef stew.

Cover the cooker and cook on high-heat setting for a further 20 minutes, stirring occasionally, until thickened. Turn off the slow cooker. Transfer cooked garden vegetable-beef stew to a serving plate. Serve hot.

  • 2 pounds (960 g) beef roast, cubed
  • 2 cups (500 g) sliced carrots
  • 2 cups (500 g) diced potatoes
  • 1 medium yellow onion, peeled and sliced
  • 1 cup (250g) sliced celery
  • 2 teaspoons quick-cooking tapioca
  • 1 tablespoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup (250 ml) water
  • 1 tablespoon brown sugar

Method

Step 1

Combine beef and vegetables in a slow cooker. Sprinkle with tapioca, salt, and pepper.

Step 2

Sprinkle with brown sugar. Cover and cook on Low-heat setting for 8 hours.
