Ingredients
- 1 cup (250 ml) plain yogurt
- 1 tablespoon freshly squezed lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper
- 3/4 teaspoon freshly ground black pepper
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 3 boneless and skinleess chicken breasts
- To Make a Sauce:
- 1 tablespoons unsalted butter
- 1 clove garlic, peeled and minced
- 1 jalapeno pepper, seeded and finely minced
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon salt
- 8 oz (240 ml) can tomato sauce
- 1 cup (250 ml) heavy cream
- 2 tablespoons cornstarch
- 1 tablespoon water
- 1/4 cup chopped fresh cilantro
Method
Step 1
In a large Ziploc bag, combine the yogurt, lemon juice, ground cumin, cinnamon, cayenne pepper, black pepper, ginger, salt, and chicken breasts. Shake well and refrigerate overnight.
Step 2
Remove the Ziploc bag from the refrigerator. Scrape off a majority of marinade that is on the chicken and discard it. Cut marinated chicken into chunks.
Step 3
Place cubed chicken in a 6-quart (6 L0 slow cooker. Add the butter, garlic, and jalapeno. In a small mixing bowl, combine 2 teaspoons of ground cumin, 2 teaspoons paprika, 1 teaspoon salt, tomato sauce, and heavy cream. Stir well and pour the sauce over the chicken.
Step 4
Cover the pot and cook in a low-heat setting for 4-5 hours or until the chicken is cooked through.
Step 5
In a small bowl, combine the cornstarch and 1 tablespoon of water. Add the cornstarch mixture to the cooker. Stir well. Cook in a high-heat setting for a further 20 minutes. Serve hot topped with chopped cilantro.
