Ingredients

  • 9 oz (270 g) package yellow cake mix
  • 1 large egg, beaten
  • 1 tablespoon unsalted butter at room temperature
  • 2 oz (60 g) reduced-fat cream cheese, at room temperature
  • 1/4 cup (60 g) granulated sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoon finely grated lemon zest
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • lemon glaze (see recipe below)

Method

Step 1

In a mixing bowl, combine cake mix, beaten egg, and butter. Mix well, reserving 1 cup (250 g) of dough. Pat the remaining dough evenly in the bottom of greased 7-inch (17.5 cm) spring-form pan. Bake in preheated oven (350 F) until lightly browned (for about 10 minutes).

Step 2

In another mixing bowl, combine cream cheese, sugar, and vanilla. Beat until smooth. Stir in combined lemon zest, flour, and salt. Pour into pan and spoon teaspoons of reserved dough over top.

Step 3

Arrange pan on rack in 6-quart (6 L) slow cooker. Cover slow cooker and cook on high-heat setting for 2 ½-3 ½ hours. Remove cooked dessert from slow cooker and cool in pan on wire rack. Drizzle with Lemon Glaze. Cut into squares and serve.

Lemon Glaze Makes 1/4 cup Ingredients: 1/2 cup (125 g) powdered sugar 2 teaspoons finely grated lemon zest 3-4 teaspoons freshly squeezed lemon juice Cooking Method: In a mixing bowl, combine sugar and lemon zest, adding enough lemon juice to make a thick glaze consistency.
