Ingredients

  • 1 pound (480 g) pork tenderloin,sliced
  • 1 cups (250 ml) low-sodium fat-free beef broth
  • 1/2 cup (125 ml) dry white wine
  • 1 medium yellow onion, peeled and chopped
  • 1/2 cup sliced red bell pepper
  • 1 potato, peeled and cubed
  • 1 cup cubed carrots
  • 2 teaspoons finely crushed peppercorns
  • 1 garlic glove, peeled and minced
  • 2 tablespoons cold water
  • 1 tablespoon cornstarch
  • 1 teaspoon vinegar
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a slow cooker, combine the pork, beef broth, wine, onion, bell pepper, potatoes, carrots, garlic, and peppercorns. Cover the pot and cook on a high-heat setting for 3-4 hours.

Step 2

In a mixing bowl, combine vinegar, cornstarch, and water. Mix well and pour the mixture into the slow cooker, stirring 2-3 minutes.

Step 3

Season to taste with salt and black pepper. Sprinkle with chopped fresh parsley and serve hot.
