Slow Cooker Poached Pears with Fruit in Rosemary Syrup Recipe

Perfectly poached pears combine with fresh fruit in a fragrant herbed sugar syrup. Very delicious dessert!

Makes 4 servings

Ingredients: 2 large pears, peeled and cored, Rosemary Syrup (recipe follows), 1 cup (250 ml) frozen raspberries, thawed, 1 cup (250 ml) frozen blueberries, thawed, 1 large orange, peeled and cut into segments, fresh mint sprigs, as a garnish

Instructions: Place pears upright in 6-quart (6 L) slow cooker. Pour Rosemary Syrup over. Cover the cooker and cook on high heat setting until pears are tender, for about 1-1½ hours.

Turn off slow cooker and open the lid. Remove cooked pears to a shallow bowl, then strain syrup over pears and cool. Refrigerate until chilled, for 1-2 hours.

Remove chilled pears from the refrigerator and cut into halves. Arrange pears and remaining fruit in shallow serving bowls. Pour Rosemary Syrup over. Garnish with the fresh mint sprig and serve.

Rosemary Syrup Recipe

Makes about 1 cup (250 ml)

Ingredients: 2/3 cup (160 ml) granulated sugar, 2/3 cup (160 ml) dry white wine, 1 tablespoon (15 ml) balsamic vinegar, 1 tablespoon (15 ml) dried rosemary leaves, a bay leaf, 1 teaspoon (5 ml) grated orange zest

Instructions: Mix well. Bring to a boil over medium-high heat. Remove the saucepan from the heat.: In a small saucepan, combine all ingredients. Pour syrup over poached pears.

Ingredients

  • 4 medium pears, peeled with stems intact
  • 1½ cups (375 ml) apple juice
  • 1½ cups (375 ml) water
  • 1½ cups (375 ml) frozen vanilla yogurt
  • Bittersweet Chocolate Sauce (see recipe bellow)
  • For Bittersweet Chocolate Sauce:
  • 1/3 cup (80 ml) unsweetened cocoa
  • 1/4 cup sugar
  • 1/3 cup (80 ml) 2% reduced-fat milk
  • 1 tablespoon (15 ml) unsalted butter
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground cinnamon

Method

Step 1

Place pears upright in a slow cooker.

Step 2

In a small saucepan, combine apple juice, water and sugar. Mix well and bring to a boil over medium-high heat. Pour apple juice mixture over pears.

Step 3

Cover cooker and cook on high-heat setting for 2 hours or until pears are tender.

Step 4

Turn off slow cooker and open the lid. Drain cooked pears and serve warm with Bittersweet Sauce.

Step 5

To make Bittersweet Sauce: In a small saucepan, combine cocoa and sugar. Mix well. Stir in milk and butter. Bring to a boil, stirring, over medium heat.

Step 6

Reduce heat to low and simmer until sauce is smooth and slightly thickened, for 3-4 minutes. Stir in vanilla and ground cinnamon. Serve sauce warm.
