Ingredients

  • 2 medium yellow onions, peeled and thinly sliced
  • 2 cups shredded cabbage
  • 2 teaspoons red pepper flakes
  • 2 teaspoons minced garlic
  • 3 pounds (1.44 kg) pork loin roast,trimmed
  • 1/4 cup (60 ml) cold water
  • 2 teaspoons cornstarch

Method

Step 1

Lightly grease slow cooker with cooking spray.

Step 2

Put onions and cabbage on the bottom of a slow cooker. Sprinkle with 1 teaspoon red pepper flakes and 1 teaspoon minced garlic. Place pork roast on top of vegetables and sprinkle with remaining red pepper and minced garlic. Cover the pot and cook on a low heat setting for 6-8 hours, or on high heat for 3-4 hours.

Step 3

Remove pork from the slow cooker. Shred cooked meat with 2 forks and set aside.

Step 4

Combine water and cornstarch in a small bowl. Mix until smooth. Add to slow cooker and mix to blend.

Step 5

Cook mixture, stirring occasionally for 15-20 minutes. Return meat to crockpot. Mix well with the sauce, and heat through.
