Slow cooker shrimp and vegetable chowder. Shrimp with vegetables, dry sherry, and milk cooked in a slow cooker. The rich flavor of this delicious chowder comes from a combination of herbs, spices, and tomato paste.

Ingredients

  • 3 cups (750 ml) reduced-sodium fat-free chicken broth
  • 1 cup diced celery ribs
  • 8 oz (240 ml) can tomato sauce
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 2 cloves garlic,peeled and minced
  • 1/4 cup (60 ml) dry sherry
  • 1-2 teaspoons dried italian seasoning
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dry mustard
  • 3 drops hot pepper sauce
  • 1 ½ cups cooked,peeled and deveined shrimp
  • salt and freshly ground black pepper to taste
  • 1/2 cup (125 ml) whole milk

Method

Step 1

In 6 quart (6L) slow cooker,combine all ingredients,except cooked shrimp,salt and black pepper. Cover and cook on high-heat setting for 4-6 hours.

Step 2

Add shrimp and milk during last 10 cooking minutes. Season slow cooker shrimp and vegetable chowder with salt and freshly ground black pepper to taste.

Step 3

Serve hot.
