Slow Cooker Szechuan Chicken
Ingredients
- 2 pounds (960 g) chicken pices, skinless,
- 1 cup chopped zucchini
- 2/3 cup (160 ml) stir-fry sauce
- 1/4 cup (60 ml) hot bean sauce
- 1 tablespoon quick-cooking tapioca
- 3 cups cooked rice
- 1/3 cup honey-roasted peanut, coarsely chopped
Method
Step 1
In a 5-6 quart (5-6L) slow cooker, combine all ingredients, except rice and peanuts. Cover and cook on a low-heat setting for 5-7 hours.
Step 2
Serve slow cooker Szechuan chicken over hot cooked rice. Sprinkle with chopped peanuts.
