Ingredients
- 1Β½ cups cooked sticky rice
- 1/2 teaspoon Italian seasoning
- 3/4 teaspoon salt, divided
- cubed Mozzarella cheese
- 2 large eggs, beaten
- 1/3 cup Italian breadcrumbs
Method
Step 1
In a large mixing bowl, combine cooked rice, Italian seasoning, and 1/2 teaspoon salt. Mix well.
Step 2
Using your hands, form the rice mixture into a log. Divide into 8 equal portions.
Step 3
Place a Mozzarella cube on each rice portion and roll it into a ball. Transfer balls to the freezer. Chill for 15 minutes, or until firm.
Step 4
Meanwhile, in a shallow dish place the Italian bread crumbs. In a separate dish, place beaten eggs.
Step 5
Remove rice balls from the freezer. One by one, dip balls in the whisked eggs, then coat with breadcrumbs.
Step 6
Place breaded rice balls in the air fryer basket. Sprinkle both sides with nonstick cooking spray.
Step 7
Fry at 390 F (195 C) for 10 minutes, or until rice balls are golden brown, flipping once during the cooking time. Serve warm.
