Ingredients

  • 1/4 cup (60 ml) buttermilk
  • 1 large egg, beaten
  • 1 cup instant potato flakes
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 boneless and skinless chicken breasts, cut into halves

Method

Step 1

Line the air fryer basket with parchment paper.

Step 2

In a mixing bowl, combine buttermilk and beaten egg. Whisk until blended.

Step 3

In another mixing bowl, combine potato flakes, grated cheese, and seasoning. Stir well.

Step 4

Dip the chicken half in the buttermilk mixture, then in the potato mixture. Transfer chicken halves to parchment-lined air fryer basket. Spritz with nonstick cooking spray. Fry at 325 F (160 C) for 15 minutes. Flip the chicken and continue baking for a further 7-10 minutes, or until golden.
