Crock pot pork loin roast recipe. Boneless pork roast with delicious homemade mango chutney cooked in a crock pot. Make Mango Chutney in advance and refrigerate it until ready to use. Crock Pot Pork Shoulder Roast with Noodles Recipe
Makes 8 servings
Ingredients: 1 cup (250 ml) chopped yellow onion, 1 cup (250 ml) chicken broth, 1 boneless pork shoulder roast, 3 tablespoons (45 ml) cornstarch, 1/3 cup (80 ml) water, 4-6 cups (1-1.5 L) cooked noodles, warm
Instructions: Place chopped onions in slow cooker. Pour in chicken broth. Sprinkle pork shoulder roast with salt and black pepper. Place in slow cooker.
Cover the cooker and cook on a low-heat setting for 7-8 hours or until meat is tender. Turn off the crock pot and open the lid. Using tongs, remove cooked pork and shred. Increase heat to high. Cook for a further 10 minutes. Stir in combined cornstarch and water, stirring 2-3 times, then return shredded pork to crock pot. Toss well.
Served hot over the cooked noodles.
Variations:
Savory Herb-Rubbed Pork
Make the recipe as above, adding 1 cup (250 ml) of sliced green bell pepper and omitting the seasoning. Rub pork roast with 1 package (1 oz (30 g)) zesty herb marinade mix. Serve pork mixture over the cooked noodles or rice.
Teriyaki Pork Recipe
Make the recipe as above through step one, omitting cornstarch, water, and cooked noodles. Mix shredded pork with 1 package (1 oz (30 g)) teriyaki marinade mix, adding enough broth and onion mixture. Serve over the cooked noodles or rice, or roll up in warm flour tortillas.
Pork Tacos Recipe
Make the recipe as above through step one, omitting chopped yellow onion, cornstarch, water, and cooked noodles. Mix shredded pork with 1 package (1 oz (30 g)) taco seasoning mix, adding enough chicken broth to moisten the pork. Serve with warm taco shells or flour tortillas with shredded fresh lettuce, chopped tomatoes, and avocado.

Ingredients
- 1/2 cup chopped yellow onion
- 1/2 cup (125 ml) chicken broth
- 1 boneless pork loin roast
- dash paprika
- salt and freshly ground black pepper
- Mango Chutney (see recipe below)
- For Mango Chutney: 3 cups chopped mango
- 1 cup brown sugar
- 1/2 cup (125 ml) cider vinegar
- 1/4 cup white raisins
- 2 teaspoons minced jalapeno chili
- 1Β½ tablespoons minced ginger
- 1 clove garlic, peeled and minced
- 4 cardamom pods, crushed
- 1 samll stick cinnamon
- 2 cloves
- salt, to taste
Method
Step 1
Place chopped yellow onion in 6-quart (6 L) slow cooker. Pour in chicken broth.
Step 2
Lightly season pork roast with paprika, salt, and black pepper. Insert meat thermometer in the center of roast. Place pork in slow cooker.
Step 3
Cover and cook on low-heat setting until thermometer registers 160 F (80 C). Turn off slow cooker and remove cooked pork. Transfer to a serving platter. Let stand, loosely covered with aluminum foil, for 10 minutes.
Step 4
Make gravy with chicken broth mixture or reserve for soup or another use. Serve pork with Homemade Mango Chutney.
Step 5
To make Mango Chutney, combine all ingredients in crock pot. Cover and cook on high heat setting for 3-4 hours. Uncover and cook until thickened to desired consistency, for further 2 hours.
Step 6
Set aside, cool and refrigerate. Season to taste with salt.
