Crock Pot Beef and Tortellini Soup Recipe

Very easy and delicious Italian soup with beef, vegetables, and tortellini cooked in the crock pot.

Makes 4 servings

Ingredients: 1 tablespoon (15 ml) all-purpose flour, 1/2 teaspoon (3 ml) salt, 1/2 teaspoon (3 ml) freshly ground black pepper, 1/2 pound (240 g) boneless beef round steak, trimmed and cut into 1-inch (2.5 cm) pieces, 1/2 cup (125 ml) cup chopped yellow onion, 1 tablespoon (15 ml) unsalted butter, 14 oz (420 ml) can reduced-sodium low-fat beef broth,  14 oz (420 ml) jar roasted garlic pasta sauce,1 cup (250 ml) sliced carrot, 1/2 cup (125 ml) water, 1/2 teaspoon (3 ml) dried Italian seasoning, 1 medium zucchini, peeled and cut into strips, 9 oz (270 g) package refrigerated cheese-filled tortellini

Instructions: In a large plastic food-storage bag, combine all-purpose flour, salt, and black pepper. Add cubed beef, a few at a time, and shake well to coat. Heat butter in a large nonstick skillet over medium-high heat. Add seasoned meat and chopped onion and cook, stirring occasionally, until meat is brown and onion is tender. Drain off fat.

Transfer beef mixture to 4-quart (4 L) crock pot. Stir in beef broth, roasted garlic pasta sauce, carrot, 1/2 cup (125 ml) water, and Italian seasoning. Cover and cook on low-heat setting for 7-8 hours. Open the lid and stir in stripped zucchini and cheese-filled tortellini. Close the lid, increase heat to high and cook for further 30 minutes.

Turn crock pot off and open the lid. Stir well beef and tortellini soup. Ladle into soup bowls. Serve hot with crusted bread.

Easy Crock Pot Italian Wedding Soup Recipe

Ingredients

  • 1 large yellow onion, peeled
  • 1 large egg, lightly beaten
  • 1/4 cup plain dry bread crumbs
  • 1 large carrot, peeled and chunked
  • 2 teaspoons dried Italian seasoning
  • 1 pound (480 g) lean ground beef
  • 2 teaspoons extra-virgin olive oil
  • 1 large fennel bulb, peeled and thinly sliced
  • 4 cans (14 oz (420 ml)) each chicken broth
  • 6 cloves garlic, peeled and thinly sliced
  • 1/2 teaspoon freshly ground white pepper
  • 1 cup orzo pasta
  • 5 cups shredded fresh spinach

Method

Step 1

Finely chop 1/3 of yellow onion. Thinly slice the remaining onion.

Step 2

In a medium mixing bowl, combine chopped yellow onion, beaten egg, bread crumbs, finely chopped dried tomatoes, and 1 teaspoon of the Italian seasoning. Stir well. Add ground beef and mix well. Shape beef mixture into 12 meatballs.

Step 3

In a large nonstick skillet, heat olive oil over medium-high heat. Add meatballs and cook until browned. Drain off fat Remove cooked meatballs from the skillet and transfer to crock pot. Add sliced onion, fennel, chicken broth, garlic, white pepper, and remaining 1 teaspoon Italian seasoning to crock pot.

Step 4

Cover crock pot and cook on low-heat setting for 8-10 hours. Open the lid and stir in uncooked orzo pasta. Increase heat to high and cook for a further 15 minutes. Stir in shredded fresh spinach.

Step 5

Turn crock pot off. Ladle Italian wedding soup into soup bowls. Serve hot.
