- 5 cups (1.25L) chicken stock
- 1 pound (480 g) boneless and skinless chicken breast, cut into cubes
- 1 cup peeled and diced potatoes
- 1 cup sliced red bell peppers
- 3/4 cup sliced carrots
- 1 cup thinly sliced cabbage
- 1/3 cup sliced green onions
- 1/3 cup sliced celery
- 2 oz (60 g) egg noodles, cooked
- salt and freshly ground black pepper
In a crock pot, combine all ingredients, except noodles and seasoning. Stir well.
Close crockpot and cook on low heat setting for 6-8 hours, adding cooked noodles during the last 30 minutes. Season to taste with salt and black pepper. Stir well.
Turn off the crock pot. Ladle soup into bowls. Serve hot.
