Curry Powder Recipe
Traditionally, curry is a potpourri of many skillfully blended flavors. Even so, this one is limited to only 2-3 food families.
Makes about 1/2 cup
Ingredients: 1 tablespoon each: of coriander seeds, Pizzazz Seasoning (recipe follows), 4 teaspoons turmeric powder, 1½ teaspoons each: of powdered ginger, celery seeds, cumin seeds, cardamom seeds, 3/4 teaspoon cayenne pepper
Instructions: In a blender, combine coriander, Pizzazz Seasoning, turmeric, ginger, cardamom, celery seeds, ground cumin, and cayenne pepper. Grind finely. Store curry powder in a tightly capped jar.
For a more interesting flavor, dry-roast the coriander seeds, cardamom seeds, and celery seeds in a heavy frying pan for a few minutes, shaking the pan often, until the seeds are crisp and fragrant.
Pizzazz Seasoning Recipe
Eight interesting flavors from the Parsley family combine to make an ideal seasoning for steamed carrots, cooked celery, meatloaf, soups, or stews.
Makes 1/2 to 3/4 cup
Ingredients: 1 small carrot, peeled, 2 tablespoons each: dried dill weed, dried parsley, 1 tablespoon each: caraway seeds, cumin seeds, coriander seeds, fennel seeds, dried celery leaves
Instructions: Leaving the carrot whole, use a potato peeler to remove long, paper-thin slices (as for making carrot curls). Preheat an oven to 200º F (100º C). Scatter the carrot strips on a cookie sheet. Bake in preheated oven for 1 hour, or until strips are very brittle and crumble easily.
Place the dehydrated carrots, dill, parsley, caraway seeds, cumin, coriander, fennel, and celery in a blender or food processor. Process until finely ground. Finally, pass through a coarse strainer. If many large pieces remain, return them to the blender.
As a result, you can store it in a tightly capped spice jar. You can also substitute lovage leaves for the celery if desired.
Grilled Curried Chicken Kebab Recipe
Ingredients
- 1 ½ pounds (760 g) boneless, skinless chicken breasts
- 2 fresh red chilies
- 1 small, ripe mango, peeled
- 1 2-inch piece fresh gingerroot, peeled and roughly chopped
- 1/2 teaspoon ground cinnamon
- 2 garlic gloves, peeled and crushed
- 2 tablespoon mild Madras curry powder
- 2 tablespoons vegetable oil
- 4 tablespoons plain yogurt
Method
Step 1
Cut the chicken into bite-sized pieces and put them in a glass bowl. Seed and finely chop fresh red chilies. Cut the mango flesh away from the stone and place it in a food processor with the remaining marinade ingredients. Blend until smooth, then spoon the marinade over the chicken pieces and mix well. Cover and leave to marinate for 5 hours.
Step 2
Thread the cubes of chicken onto bamboo skewers and cook on a prepared barbecue until browned (5-6 min), turning frequently and brushing with the marinade. Serve garnished with coriander leaves.
