- 1/4 cup (60 ml) water
- 4 frozen cod fillets
- 12 black olives, sliced
- 2 tablespoons marinated capers
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- a pinch of chili flakes
- 3 ripe tomatoes, quartered
- chopped fresh parsley, for garnish
Pour the water into a 6-quart (6 L) electric instant pot. Place the frozen cod fillets in the water. Add black olives and capers. Drizzle with olive oil, then sprinkle with sea salt and chili flakes.
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 4 minutes.
Using the Natural Release method, bring pressure to normal. Carefully unlock and open the lid. Using a wooden spatula, remove cooked cod fillets from the cooker. Pour the broth with remaining ingredients over the top.
Serve hot with fresh tomatoes and chopped parley.
