Ingredients
- 3/4 cup (180 ml) freshly squeezed oranger juice
- 1/4 cup (60 ml) freshly squeezed lime juice
- 1/2 yellow onion, peeled and chunked
- 8 cloves garlic, peeled
- 3 tablespoons olive oil
- 1Β½ teaspoons dried oregano
- 1 teaspoon ground cumin
- kosher salt and freshly ground black pepper, to taste
- 4 pounds (1.9 kg) boneless pork shoulder, cut into 4 pieces
- 2 tablespoons canola oil
Method
Step 1
In a blender, combine the orange juice, lime juice, onion, garlic, olive oil, oregano, cumin, 3 teaspoons salt, and black pepper. Blend until smooth. Set aside.
Step 2
Using a sharp knife, pierce small slashes in the pork. Transfer the meat to a large bowl. Add the mojo marinade, cover and refrigerate for 2-8 hours, or overnight.
Step 3
Remove marinated pork form the refrigerator and transfer to a large bowl, reserving marinade for cooking.
Step 4
Heat the canola in an instant pot turned to the saute mode. Add the pork and cook until goladen brown, for about 5 minutes per side.
Step 5
In a 6-8 quart (6-8 L) instant pot, combine cooked pork and reserved marinade. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 1 hour.
Step 6
Using the Natural Release method, bring pressure to normal. Carefullu unlock and open the lid. Remove cooked pork from the cooker and transfer to a medium bowl.
Step 7
Using a fine-mesh sieve, strain the liquid form the pressure cooker. Remove and idscard the grease and solids. Return strained liquid to the cooker. Switch to the saute mode and simmer until the sauce reduced by half, for about 15 minutes.
Step 8
Add sauce to cooked meat and toss well to combine. Serve hot.
