Ingredients

  • 1/2 cup (125 ml) honey
  • 1 cup (250 ml) water
  • 1/2 cup (125 ml) mustard
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • salt and freshly ground black pepper, to taste
  • 4 boneless and skinless chicken breasts
  • 1 teaspoon cornstarch

Method

Step 1

In an electric instant pot, combine honey and water. Turn the pot to the sauté mode. Cook, uncovered, stirring constantly, until honey dissolves, for about 5 minutes.

Step 2

Stir in the mustard, Italian seasoning, salt, black pepper, garlic powder, and paprika. Set the steam rack inside, then add chicken breasts and coat with honey mustard mixture.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 8 minutes (if you use frozen chicken, set the timer for 12 minutes)

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Remove cooked chicken from the cooker and set aside.

Step 5

Stir combined cornstarch and 1 tablespoon water into mustard-honey sauce. Switch to the sauté mode. Bring to a boil, then thicken for 2-3 minutes.

Step 6

Return cooked chicken to the instant pot. Coat with sauce. Serve hot.

    Made this tonight. With rice and bacon green beans. Must say the honey mustard chicken was very good!!
