Ingredients
- 3 pound (1.44 kg) pork shoulder roast, cubed into 4-inch cubes
- 2½ teaspoons Hawaiian salt
- 1 tablespoon plus 1 teaspoon Liquid Smoke
- 2 teaspoons soy sauce
- 1½ teaspoons garlic powder
- 1 head cabbage, sliced into wedges
- 1 up (250 ml) water
Method
Step 1
In a large mixing bowl, combine 1 tablespoon of Liquid Smoke and 2 teaspoons soy sauce. Mix well. Add cubed pork and coat well with the soy mixture. Rub with Hawaiian salt and garlic powder. Cover and let it marinate for at least 30 minutes or overnight.
Step 2
Pour 1 cup (250 ml) water into an electric instant pot. Place marinated pork along with the marinade in the cooker. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 50 minutes.
Step 3
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Using a slotted spoon, remove cooked pork from the cooker and transfer it to a large bowl. Wrap with a foil and keep warm.
Step 4
Remove 1/2 cup (125 ml) of cooking liquid from the pot and set aside. Place sliced cabbage wedges into the instant pot. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 3 minutes.
Step 5
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid.
Step 6
In a mixing bowl, combine the remaining 1/2 teaspoon Liquid Smoke and reserved 1/2 cup of cooking liquid. Stir well. Add the pork roast, shredded with two forks. Serve with cooked cabbage and rice.
