Ingredients

  • 1/2 cup (125 ml) low-sodium soy sauce
  • 1/2 cup (125 ml) water
  • 1/4 cup (60 ml) rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon freshly ground white pepper
  • 1 pound (480 g) raw shrimp, peeled, deveined, tails intact
  • 1/2 pound asparagus, trimmed
  • 1 cup uncooked rice noodles
  • 1 tablespoon sesame seeds

Method

Step 1

In an electric instant pot, combine the soy sauce, water, vinegar, ginger, garlic, sesame oil, and white pepper. Mix well. Add shrimp, noodles, and asparagus.

Step 2

Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 0 minutes

Step 3

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Check asparagus and shrimp for doneness, if not, switch to saute mode and simmer, stirring occasionally, for 1-2 minutes.

Step 4

In a small mixing bowl, combine cornstarch and water. Stir until cornstarch is dissolved completely. Using a wooden spatula, whisk cornstarch slurry into the sauce, stirring gently, until the sauce is thickened.

Step 5

Remove cooked shrimp, rice noodles, and asparagus from the cooker and transfer them to a large bowl. Pour the sauce over the shrimp. Sprinkle with sesame seeds. Serve hot
