Ingredients
- 1 pound (480 g) sweet potatoes, washed, scrubbed and cut into wedges
- 1¼ teaspoons Cajun seasoning
- 1 tablespoon fresh thyme, chopped
- 1½ tablespoons olive oil
Method
Step 1
Preheat your oven to 450 F (220C).
Step 2
Season potato wedges with 1 teaspoon Cajun seasoning(reserving remaining 1/4 teaspoon), chopped thyme, and olive oil.
Step 3
Line baking sheet with parchment paper. Arrange seasoned potato wedges in a single layer on a baking sheet.
Step 4
Bake in preheated oven for 15 minutes, then .using a spatula, turn them and bake for a further 10-15 minutes. Sprinkle with the remaining 1/4 teaspoon Cajun seasoning and serve immediately.
