Ingredients
- 3 pounds (1.44 kg) boneless and skinless pork shoulder, cut into 2-inch (5 cm) pieces
- 2 tablespoons finely grated orange zest
- 1 tablespoon minced garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon salt
- 3/4 cup (180 ml) beef broth
- 3 tablespoons lard
- 2 tablespoons freshly squeezed lime juice
Method
Step 1
In a pressure cooker, combine cubed pork, orange zest, garlic, cumin, chili powder, and salt. Mix until meat is evenly coated in the spices. Pour in beef broth.
Step 2
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 35 minutes.
Step 3
Turn off the pressure cooker. Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Transfer cooked pork chunks to a large bowl, reserving cooking liquid.
Step 4
Melt the lard in a large nonstick skillet over medium-high heat. Working in batches, add pork chunks. Fry until crisp, turning often, for 6-8 minutes. Transfer fried pork to a serving platter.

Using a flatware spoon, defat the sauce in the pressure cooker. Pour sauce into a hot skillet. Stir in lime juice. Boil over medium-high heat until reduced by half. Pour sauce over fried pork chunks. Serve immediately.
