Pressure Cooker Pork Chops with Carrots and Dill Recipe
Makes 4-6 servings
Ingredients: 2 tablespoons (30 ml) unsalted butter, 1 tablespoon (15 ml) olive oil, 4 bone-in pork loin chops, 1/2 teaspoon salt, 1/2 teaspoon freshly ground black pepper, 16 baby carrots, 1 tablespoon (15 ml) minced fresh dill fronds, 1/2 cup (125ml) dry white wine, such as Chardonnay, 1/2 cup (125 ml) chicken broth
Instructions: In a 6-quart (6 L) pressure cooker, melt 1 tablespoon (15 ml) of butter over medium heat (turn to a browning function in an electric pressure cooker). Season pork chops with salt and black pepper. Add half of the pork chops to the pot and brown them, turning once, for about 4 minutes. Remove browned meat from the pot and transfer it to a large plate. Repeat with remaining chops.
Add the remaining butter to the pot, then the carrots and dill. Cook over medium heat, stirring, for a further 1 minute. Pour in dry white wine, scraping any browned bits in the pot as the liquid comes to a boil. Stir in chicken broth. Return browned chops to the pressure cooker, arranging them as evenly as possible in layers.
Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set the timer to cook for 12 minutes (for an electric pressure cooker set the machine to cook at high pressure (9-11 psi). Set the timer to cook at high pressure for 18 minutes).
Open the pressure cooker, using the Quick Release method. Unlock and open the pot. Transfer baked pork chops to individual plates. Spoon the sauce and carrots over. Serve immediately.

Method
Step 1
In a small mixing bowl, combine all dry ingredients. Mix well.
Step 2
Rub both sides of pork chops with a spicy mixture.
Step 3
Melt butter in the olive oil in a 6-quart (6 L) electric instant pot turned to the sauté mode. Add one seasoned pork chop and brown lightly on both sides, for about 3 minutes, turning once.
Step 4
Remove browned meat from the pressure cooker and transfer it to a large plate. Repeat with remaining chops.
Step 5
Add the onions to the pot. Cook, stirring, until lightly browned, for about 4 minutes. Stir in cherry jam and dry red wine until the jam melts, scraping up all the browned bits from the bottom of the pot.
Step 6
Return reserved pork chops and any accumulated juices to the cooker. Close the pressure cooker and lock the lid.
Step 7
Set the machine to cook at high pressure. Set the timer to cook for 20 minutes.
Step 8
Open pressure cooker, using the Quick Release method. Unlock and open the lid. Transfer cooked pork chops to a serving plate. Ladle cherry sauce over and serve immediately.
