Slow Cooker Tomato-Chicken Stew
Ingredients
- 4 carrots, cubed
- 4 potatoes, peeled and cubed
- 1 onion, peeled and quartered
- 1½ pounds (750 g) beef stewing meat, cubed
- 8 oz (240 ml) can tomato juice
- 1 package taco sesoning mix
- 2 cups (500 ml) water, divided
- 1 1/2 tablespoons cornstarch
- 1/4 tespoon freshly ground black pepper
Method
Step 1
Layer the first four ingredients in the slow cooker. Add tomato sauce.
Step 2
Combine taco seasoning with 1½ cups water. Stir cornstarch into the remaining ½ cup water until smooth Stir into the rest of the water with taco seasoning. Pour over ingredients into the slow cooker. Season with salt and black pepper. Cover and cook on a low-heat setting for 7-8 hours.
Step 3
Serve over rice. Variation for beef stew olé: For those eating at your table who are cautioning about spicy food, choose a "mild" taco seasoning mix and add 1 teaspoon of sugar to the seasonings.
