Slow Cooker Steak and Sweet Potato Stew Recipe
Beef stew with vegetables and apples cooked in the slow cooker. Apples give this delicious stew a touch of sweetness.
Makes 4 servings
Ingredients: 1 pound (480 g) lean beef round steak, cut into cubes, 1½ cups low-sodium fat-free beef broth, 1 pound (480 g) sweet potatoes, peeled and cubed, 2 medium yellow onions, peeled and cut into wedges, 1 teaspoon dried savory leaves, 2 medium apples, peeled and thickly sliced, 1/2 cup frozen peas, thawed, 1/4 cup (60 ml) cold water, salt and freshly ground black pepper, to taste, 2 tablespoons cornstarch
Instructions: In a 6-quart (6 L) slow cooker, combine all ingredients, except apples, peas, cornstarch, water, and seasoning. Cover and cook on low-heat setting for 6-8 hours, adding apples during last 15 minutes.
Open the lid and stir in thawed peas. Switch heat to high, cover and cook for further 10 minutes. Stir in combined cornstarch and water. Continue to cook, stirring 2-3 minutes.
Turn off the slow cooker and open the lid. Season beef stew with salt and black pepper to taste. Stir well, then ladle into soup bowls and serve immediately.
Slow Cooker Beef Stew Ole Recipe
Ingredients
- 4 carrots, cubed
- 4 potatoes, peeled and cubed
- 1 onion, peeled and quartered
- 1½ pounds (750 g) beef stewing meat, cubed
- 8 oz (240 ml) can tomato juice
- 1 package taco sesoning mix
- 2 cups (500 ml) water, divided
- 1 1/2 tablespoons cornstarch
- 1/4 tespoon freshly ground black pepper
Method
Step 1
Layer first four ingredients in slow cooker. Add tomato sauce.
Step 2
Combine taco seasoning with 1½ cups water. Stir cornstarch into remaining ½ cup water until smooth Stir into rest of water with taco seasoning. Pour over ingredients in slow cooker. Season with salt and black pepper. Cover and cook on low-heat setting for 7-8 hours.
Step 3
Serve over rice. Variation for beef stew olé: In those eating at your table are cautioning about spicy food, choose a "mild" taco seasoning mix and add 1 teaspoon sugar to the seasonings.
