How to Select the Perfect Cut of Meat for Beef Stew

Slow cooker beef stew is a comforting and delicious meal that can be enjoyed any time of the year. But to get the best flavor out of your stew, it’s important to select the right cut of meat. Different cuts of meat have different levels of fat, texture, and flavor – all factors that can affect the outcome of your stew.

How To Select The Perfect Cut Of Beef For Beef Stew: The best cut of beef for beef stew is the chuck roast. Chuck roasts are made from the shoulder of the animal, which means they have less fat and connective tissue than other cuts. They also have a lot of flavors and are ideal for dishes like slow cooker beef stew because they tend to stay naturally tender.

A rump roast is also a good option for slow cooker beef stew because it’s made from near the distal end of the animal’s buttock and has less connective tissue than other cuts. But if you’re looking for a roast that’s a little more tender, like a sirloin or ribeye, go with those.

Rib Roast vs Ribeye Steak: A rib roast is cut from the ribs of the animal while a ribeye steak is made from the muscle of the animal. A beef rib eye will have less fat than a beef rib roast and be much smaller in size. Often a ribeye steak will be much more expensive than a beef rib roast.

Slow Cooker Beef Stew with Vegetables

Ingredients

  • 2-3 pounds (960-1.4 kg) of beef stew meat, cubed
  • 1 cup of all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, peeled and diced
  • 3 cloves garlic, peeled and minced
  • 1 tablespoon tomato paste
  • 4 cups (1 L) beef broth
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 large potato, peeled and cubed
  • 1 cup sliced mushrooms
  • 1 cup (250 ml) dry red wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon sugar
  • 2 bay leaves

Method

Step 1

In a medium bowl, combine the flour, salt, and pepper. Mix well.

Step 2

Coat the beef stew meat in the flour mixture. Heat the olive oil in a large nonstick skillet over medium heat. Add the beef stew meat to the slow cooker and brown the pieces on all sides.

Step 3

Add the mushrooms, onion, and garlic and cook until the onion is tender about 5 minutes. Remove cooked meat and vegetables from the skillet and transfer them to a large slow cooker. Add the potatoes, carrots, celery, bay leaves, red wine, thyme, Worcestershire sauce, and sugar to the slow cooker and stir to combine.

Step 4

Cover the pot and cook on low heat for 6-8 hours, or until the beef is tender. Serve with your favorite sides and enjoy!
