We eat vegetables because they are one of the best sources of vitamins and minerals. Some vegetables, such as peas and beans, are good sources of protein, while roots, stems, leaves, and seeds provide the body with carbohydrates in the form of starch. Cellulose, which forms the cell walls of plants, is essential for the proper functioning of the digestive organs.
To preserve the food value, color, and flavor of vegetables, it is essential that they should be chosen carefully, stored properly, and cooked well. Here is an example of roasted vegetables.
The cooking times which are given are those for the moderately well-cooked dish, but, of course, the times may be varied, according to personal taste, as some people prefer vegetables to retain their crispness, whilst others like them very tender.
A Few Rules to Remember:
1. In choosing fresh vegetables, be sure they are crisp or firm, according to their type, and free from blemishes.
2. Clean them as soon as possible and store them in the refrigerator in closed bags, or the vegetable crisper.
3. If the vegetables are unsuitable for storing in the refrigerator, for example, potatoes or onions, place them in a cool, dry, but well-ventilated closet, preferably on a wire rack.
4. Choose vegetables in season, as they are higher in food value, have a better flavor, and, of course, are cheaper.
5. To retain their food value, prepare vegetables just before cooking.
6. Use as little water as possible when cooking, and boil only until this will retain the color, flavor, and food value. Use the leftover vegetable water for soups, gravies, stock, etc.
