Slow cooker cherry-pistachio brie recipe. Slow-cooked brie cheese with a cherry-cognac mixture and toasted pistachio.
Very easy and elegant dessert recipe. You can also bake this dessert in an oven if desired.
Oven Baked Cherry-Pistachio Brie Recipe

Makes 6 servings
Ingredients: 2 tablespoons (30 ml) balsamic vinegar, 1 oz (30 ml) hot water, 1/2 cup (125 ml) pitted dried cherries, 1/3 cup (80 ml) toasted chopped pistachios, 1/2 pound (240 g) Brie cheese weel, 2 tablespoons (30 ml) clear honey, 1/4 teaspoon (1 ml) ground cinnamon
Instructions: Preheat the oven to 350º F (175º C). In a small mixing bowl, combine the balsamic vinegar, hot water, and dried cherries. Mix well, then set aside and allow to soak for 15 minutes.
Meanwhile, heat a small saucepan over medium heat. Add honey and ground cinnamon, mix well and, then reduce heat to low and simmer, stirring occasionally, for 2 minutes. Turn off the heat, remove the pan and set aside.
Line a baking sheet with parchment paper. Unwrap Brie cheese and place it on the parchment-lined baking sheet. Using a colander, drain soaked cherries, then place on top of Brie. Sprinkle with toasted pistachios.
Bake in preheated oven for 15 minutes or until Brie starts to ooze. Turn off the oven and remove baked cherry-pistachio Brie. Transfer to a serving plate. Drizzle with the cinnamon-honey mixture.
Serve it warm with crackers, crostini or baguette slices.
You can also prepare Chipotle-Raspberry Brie: prepare as directed, except of dried cherries, in a mixing bowl, combine 1/2 cup (125 ml) raspberry preserves or jam, 1 tablespoon (15 ml) finely chopped canned chipotle peppers in adobo sauce, and 1 teaspoon finely shredded orange peel. Sprinkle heated Brie cheese with 1/4 cup (60 ml) crumbled crisp-cooked bacon.

Ingredients
- 1/2 cup (125 ml) snipped dried cherries
- 1/4 cup (60 ml) cherry preserves
- 1 tablespoon Cognac
- 2 8 oz (240 g) rounds Brie cheese
- 1/2 cup (125 ml) toasted pistachio nuts, coarsely chopped
- toasted bread
Method
Step 1
In a small mixing bowl, combine dried cherries, preserves, and Cognac. Mix well.
Step 2
Place one weel of Brie cheese in a 2-quart (2 L) slow cooker. Pour half of the cherry mixture over cheese in the cooker. Add the second Brie weel, then top with the remaining cherry mixture.
Step 3
Cover slow cooker and cook on low-heat setting for 3 hours or until cheese is softened but not melted.
Step 4
Turn off the slow cooker and remove baked cheese and cherry mixture. Transfer to a serving platter. Sprinkle with toasted pistachios. Serve warm on toasted bread.
