- 3 tablespoons olive oil, divided
- roasting chicken, skinned and cut into pieces
- 1½ cups mushrooms
- 1 yellow onion, peeled and diced
- 2 cloves garlic, peeled and minced
- 1 cup (250 ml) chicken broth
- 6 oz (180 g) can tomato paste
- 1/2 cup (250 ml) dry red wine
- 2 teaspoons sugar
- 1 teaspoon ground oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons minced fresh basil
