Slow Cooker Beef Steak with Mushroom Gravy

Ingredients

  • 3 tablespoons olive oil, divided
  • roasting chicken, skinned and cut into pieces
  • 1½ cups mushrooms
  • 1 yellow onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 1 cup (250 ml) chicken broth
  • 6 oz (180 g) can tomato paste
  • 1/2 cup (250 ml) dry red wine
  • 2 teaspoons sugar
  • 1 teaspoon ground oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons minced fresh basil

Method

Step 1

Preheat 2 tablespoons olive oil in a large skillet until hot. Cook half of the chicken pieces on each side for 3-5 minutes, until browned. Using a slotted spoon, remove the cooked chicken and set it aside.

Step 2

Using the same method, cook the remaining chicken. Heat the remaining olive oil in a large skillet. Add mushrooms, onions, and garlic and cook, stirring until onions are soft.

Step 3

Transfer mushroom mixture to slow cooker. Top with cooked chicken. In a mixing bowl, combine chicken broth, tomato paste, red wine, sugar, oregano, and seasoning. Mix well and pour mixture over chicken.

Step 4

Cover slow cooker and cook in a low-heat setting for up to 9 hours. Stir in basil and serve immediately.
