Method

Step 1

In a 6-quart (6 L0 slow cooker, combine the chicken, drained tomatoes, carrots, celery, onion, garlic, chicken broth, bay leaves, and Italian seasoning. Mix well.

Step 2

Cover the pot and cook in a low-heat setting for 6 hours.

Step 3

Turn off the cooker and open the lid. Discard bay leaves. Remove the cooked chicken from the slow cooker and transfer it to a cutting board. Using two forks, shred it and return it to the cooker.

Step 4

In a small mixing bowl, combine the milk, heavy cream, and all-purpose (plain) flour. Whisk well. Add to the pot along with tortellini and spinach.

Step 5

Cook the tortellini for 15 minutes. The soup should get thicker during that time. The tortellini should be cooked all the way through. Serve hot.
