Slow Cooker Thai Chicken Wings

- 2½ pounds (1.5 kg) chicken wings
- 1/2 cup (125 ml) salsa
- 2 tablespoons+1/4 cup creamy peanut butter
- 1 tablespoon freshly squeezed lime juice
- 2 teaspoons+3 tablespoons soy sauce
- 2 teaspoons fresh ginger,grated
- 1/4 cup sugar
- 2 cloves garlic,peeled and minced
Place chicken wings in a 3½-4-quart(3-4l) slow cooker.
In a small mixing bowl,combine salsa,peanut butter(2 tbsp),lime juice,soy sauce(2 tsp) and ginger. Mix well and pour salsa mixture over chicken wings. Toss well to coat.
Cover slow cooker and cook on low-heat setting for 5-6 hours.
Drain chicken wings and discard cooking liquid. Return chicken wings to slow cooker. Gently stir in peanut sauce(recipe follows). Serve slow cooker Thai chicken wings Immediately.
For Peanut Sauce: In a small saucepan,combine sugar,peanut butter(1/4 cup),soy sauce(3 tbsp),water and minced garlic. Stir well and cook over medium-low heat until sugar is dissolved and mixture is smooth. Set aside and allow to cool and thicken.
