Slow Cooker Home-Style Turkey-Vegetable Soup Recipe

Makes 12 servings

Ingredients: 1¾ quarts (1¾ L) low-sodium and fat-free chicken broth, 3 cups (750 ml) water, 4 pounds (2 kg) turkey wings, 2 cups coarsely chopped yellow onions, 1/4 teaspoon dried marjoram, 1/4 teaspoon dried thyme leaves, 14½ oz (435 ml) can diced tomatoes, undrained, 16 oz (480 ml) can Great Northern beans, rinsed and drained, 1 cup peeled and chopped turnip, 1 cup chopped fresh celery, 1 cup chopped cabbage, and 1 cup chopped carrots, 1½ cups whole kernel corn, 1/4 cup quick-cooking barley, 1/4 cup uncooked ditalini, salt and freshly ground black pepper

Instructions: In 6 quart (6 L) slow cooker, combine chicken broth, water, turkey wings, onions, and herbs. Stir well. Cover cooker and cook on high-heat setting for 4-5 hours. Using tongs, remove cooked turkey wings. Discard bones and, using two forks, shred meat and reserve. Skim fat from soup. Add remaining ingredients, except barley, ditalini, and seasoning. Cover and cook on high-heat setting for a further 3-4 hours, stirring reserved turkey, barley, and ditalini during the last 20 minutes. Turn off the slow cooker. Season to taste with salt and black pepper. Ladle into soup bowls. Serve turkey soup hot.

Makes 6 servings

Ingredients: 2½ quarts (2½ L) low-sodium fat-free chicken broth, 1 cup chopped carrots, 1 cup chopped fresh celery, 1 cup chopped yellow onion, 1 cup sliced fresh mushrooms, 1 tablespoon minced garlic, 3/4 teaspoon dried marjoram and 3/4 teaspoon dried thyme leaves, 4 oz (120 g) cooked egg noodles, 4 cups cooked and diced turkey meat, 1 cup frozen peas, thawed, salt and freshly ground black pepper

Instructions: In 6-quart (6 L) slow cooker, combine all ingredients, except noodles, turkey meat, thawed peas, and seasoning. Cover and cook on high-heat setting for 3-4 hours, stirring noodles, turkey, and peas during the last 15 minutes. Turn off the slow cooker. Season turkey soup with salt and black pepper to taste. Ladle it into soup bowls. Serve hot.

Ingredients

  • 4 cups (1 L) low-sodium fat-free chicken broth
  • 1 pound (480 g) boneless and skinless turkey breast, cut into cubes
  • 2 large potatoes, peeled and cubed
  • 1 cup coarsely chopped yellow onion
  • 1/3 cup thinly sliced celery
  • 1/3 cup sliced carrots
  • 1 tablespoon dried tarragon leaves
  • salt and freshly ground black pepper

Method

Step 1

In 6 quart (6 L) slow cooker, combine all ingredients, except seasoning. Cover and cook on high-heat setting for 4-6 hours.

Step 2

Turn off slow cooker. Season to taste with salt and black pepper.

Step 3

Ladle turkey soup into soup bowls. Serve hot.
