Ingredients
- 2 tablespoons olive oil
- 1 pound (480 g) boneless beef stew, cubed
- 1 large yellow onion, peeled and chopped
- 2 cloves garlic, peeled and diced
- 7 oz (210 ml) can diced green chiles, drained
- 8½ oz (255 ml) can whole-kernel corn, undrained
- 2 teaspoons whole-kernel corn, undrained
- 3 medium potatoes, peeled and diced
- 1 teaspoon ground cumin
- 2 tablespoons yellow cornmeal
- salt and freshly ground black pepper
Method
Step 1
Combine all ingredients in a slow cooker, except cornmeal. Mix well. Cover and cook on a low-heat setting for 7 to 8 hours, or until the beef is tender.
Step 2
Turn the control on High, stirring in cornmeal. Cover and cook beef stew on High for 20-25 minutes.
