Slow Cooker Vegetable Ground Beef Stew Recipe

Ground beef with vegetables, beef broth, and V-8 Juice cooked in a slow cooker.

Makes 6 servings

Ingredients: 1 pound (480 g) extra-lean ground beef, 1 teaspoon (5 ml) onion powder, 3/4 teaspoon (3½ ml) garlic powder, 1½ cups (375 ml) nonfat beef broth, 1/2 cup (125 ml) V-8 juice, 1 teaspoon (5 ml) granulated sugar, 1½ cups (375 ml) chopped carrots, 2 cups (500 ml) diced potatoes, 1/4 teaspoon (1¼ ml) freshly ground black pepper

Instructions: Grease large nonstick skillet with cooking spray. Add ground beef, onion, and garlic powders. Cook over medium heat, stirring frequently until meat browned and crumbled. Drain well.

Lightly grease inside of 6-quart (6 L) slow cooker with nonstick cooking spray. Combine all ingredients in a slow cooker and mix well. Cover and cook on low-heat setting for 8-10 hours.

Turn off the slow cooker and open the lid. Transfer cooked beef stew to soup bowls. Serve hot.

Slow Cooker Easy Beef and Vegetables Recipe

Make 8 servings

Ingredients: 1/4 cup (60 ml) all-purpose flour, 1/2 teaspoon (2½ ml) freshly ground black pepper, 2 pounds (960 g) beef stew meat, cubed into 1-inch (2.5 cm) cubes, 4 carrots, peeled and sliced on the diagonal, 3 medium potatoes, peeled and diced, 2 medium yellow onions, peeled and chopped, 1/2 cup (125 ml) sliced celery, 1½ cups (375 ml) nonfat beef broth, 1 teaspoon (5 ml) steak sauce, 1/2 teaspoon (2½ ml) minced garlic, 1 teaspoon (15 ml) paprika

Instructions: Spray a large nonstick skillet with cooking spray. Combine all-purpose flour and black pepper in a zip-top bag. Shake well to mix. Drop beef stew meat into the bag and shake to coat completely with flour mixture.

Add seasoned meat to greased skillet and cook over medium heat, stirring frequently, until browned on all sides.

Grease inside of slow cooker with nonstick cooking spray. Place carrots, potatoes, onions, and celery in the bottom of 6-quart (6 L) slow cooker. Top with cooked meat. In a medium mixing bowl, combine remaining ingredients. Stir well and pour over meat and vegetables. Stir well.

Cover cooker and cook on low-heat setting for 10-12 hours.

Slow Cooker Navajo Beef Stew Recipe


  • 2 tablespoons olive oil
  • 1 pound (480 g) boneless beef stew, cubed
  • 1 large yellow onion, peeled and chopped
  • 2 cloves garlic, peeled and diced
  • 7 oz (210 ml) can diced green chiles, drained
  • 8½ oz (255 ml) can whole-kernel corn, undrained
  • 2 teaspoons whole-kernel corn, undrained
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon ground cumin
  • 2 tablespoons yellow cornmeal
  • salt and freshly ground black pepper


Step 1

Combine all ingredients in slow cooker, except cornmeal. Mix well. Cover and cook on Low-heat setting 7 to 8 hours or until beef is tender.

Step 2

Turn control on High, stirring in cornmeal. Cover and cook beef stew on High 20-25 minutes.
