Ingredients

  • 1 large egg yolk
  • 1 large egg, lightly beaten
  • 3/4 cup (180 ml) heavy cream
  • 4 tablespoons pumpkin puree
  • 4 tablespoons granulated sugar, divided
  • 1 teaspoon vanilla
  • 3/4 teaspoon pumpkin pie spice

Method

Step 1

In a medium mixing bowl, combine egg yolk and beaten egg. Whisk well. Slowly pour in heavy cream, whisking continuously. Stir in pumpkin purée and vanilla, mixing to incorporate. Set it aside.

Step 2

In a small mixing bowl, combine 2 tablespoons of sugar and pumpkin pie spice. Mix well, then stir the dry mixture into the liquid mixture.

Step 3

Fill two shallow ramekins with the mixture, then place them on the bottom of the slow cooker. Carefully pour the water around the ramekins. Cover the pot and cook on low-heat setting for 2-3 hours or until Brulé is set.

Step 4

Turn off the cooker and open the lid. Remove ramekins from the pot and transfer to a wire rack. Cool to room temperature.
