Ingredients
- 1/2 cup (125 g) granulated sugar
- 5 tablespoons unsalted butter, at room temperature
- 2 large eggs,lightly beaten
- 1Β½ cups (370 g) baking powder
- 2 tablespoons freshly squeezed orange juice
- 3/4 cup (180 g) orange marmalade
- Orange Marmalade Sauce (see recipe below).
- 1Β½ cups (370 g) all-purpose flour
Method
Step 1
In a mixing bowl, combine sugar and butter. Beat until fluffy. Stir in beaten eggs, then stir in combined all-purpose flour and baking powder. Stir in orange juice.
Step 2
Spread orange marmalade in bottom of greased 1-quart (1 L) bowl, souffle dish or pudding mold and spoon batter over. Cover tightly with a lid. Place bowl on rack in 6-quart (6 L) slow cooker. Pour bowling water into slow cooker to come about 2/3 up side of bowl. Cover slow cooker and cook on low-heat setting for 1 Β½ hours or until toothpick inserted in the centre comes out clean.
Step 3
Remove steamed marmalade pudding from slow cooker. Cool on wire rack for 30 minutes.
Step 4
Loosen edge of pudding with a knife. Invert onto serving platter. Serve warm with Orange marmalade Sauce.
Step 5
Orange Marmalade Sauce: 3/4 cup (180 g) orange marmalade 2 teaspoons cornstarch 2/3 cup (160 ml) cold water
Step 6
In a small saucepan, bring marmalade to a boil over medium heat. Stir in combined cornstarch and water. Cook, stirring, until thickened, for about 1 minute.
