Slow Cooker Turkey Stew with Apricots Recipe

Serve this delicious stew with jasmine or basmati rice.

Makes 4 servings

Ingredients: 1 pound (480 g) turkey breast, cut into cubes, 1ΒΎ cup (430 ml) low-sodium fat-free chicken broth, 1 cup (250 ml) chopped yellow onion, 1 cup (250 ml) chopped tomato, 2 cloves garlic, peeled and minced, 1 teaspoon ground cumin, 1/2 teaspoon ground allspice, 10 dried apricot halves, cut into quarters, 2 tablespoons (30 ml) cornstarch, 1/4 cup (60 ml) water, 1/4 cup (60 ml) chopped fresh cilantro, salt and freshly ground black pepper, to taste, 1 cup (250 ml) cooked rice, warm

Instructions: In a 6-quart (6 l) slow cooker, combine all ingredients, except cornstarch, water, chopped fresh cilantro, seasoning, and rice. Cover cooker and cook on low-heat setting for 5-6 hours. Increase heat to high and cook for a further 10 minutes.

Open the lid and stir in combined cornstarch and water, stirring 2-3 times. Stir in chopped fresh cilantro. Season to taste with salt and black pepper. Turn the slow cooker off. Serve turkey stew over the cooked rice.

Slow Cooker Turkey Breasts

Ingredients

  • 1 pound (480 g) turkey breast, cut into cubes
  • 2 cups (500 ml) reduced-sodium fat-free chicken broth
  • 1/2 cup (125 ml) chopped yellow onion
  • 1/2 cup (125 ml) uncooked wild rice
  • 1 large carrot, peeled and chunked
  • 1 red bell pepper, seeded, cored, and sliced
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a 6-quart (6 L) slow cooker, combine all ingredients, except rice and seasoning. Mix well.

Step 2

Cover the cooker and cook on a low-heat setting for 6-8 hours, stirring in wild rice during the last 2 hours.

Step 3

Turn off the slow cooker and open the lid. Season turkey soup with salt and black pepper. Stir well. Ladle the soup into soup bowls. Serve hot.
