Slow Cooker Stuffed Peppers

Ingredients :

  • 1 pound(480 g) extra-lean ground beef
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups instant rice
  • 2 cups V-8 juice
  • 4 large green bell peppers,cored and seeded
  • 2 14 oz(420 ml each) cans Mexican-style stewed tomatoes,drained

Directions :

  1. Lightly grease inside of slow cooker with cooking spray.
  2. In a mixing bowl,combine ground beef,garlic powder,onion powder,rice, and V-8 juice.
  3. Mix well and stuff mixture into cored and seeded bell peppers.
  4. Place stuffed peppers in slow cooker.
  5. Spoon drained tomatoes on top of and around bell peppers.
  6. Cover slow cooker and cook on low-heat setting for 8-9 hours.
  7. To serve,cut slow cooker stuffed peppers in half and spoon tomatoes over top.

    I am making this tonight and have two questions:

    1. Do we put the rice in uncooked?
    2. I do not have instant rice. How do you think this will change the recipe?

      Hello,Yes,we put uncooked rice.This recipe is for instant rice.Instant rice cooks faster,using another kind of rice,you risk to get this delicious meal with not well cooked rice inside.
