Ingredients

  • 1/2 cup pork rinds
  • 1/2 tablepsoon fresh parsley leaves
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon yellow mustard
  • 1/3 tablespoon cider vinegar
  • 1 teaspoon garlic salt
  • 1/3 teaspoon freshly ground black pepper
  • 2 large eggs, beaten
  • 2 pork schnitzel halved

Method

Step 1

In a food processor, combine pork rinds, parsley, fennel seeds, and mustard. Pour in cider vinegar, then season with salt and black pepper. Process until smooth.

Step 2

Remove the pork rind mixture from the food processor and transfer it to a large bowl. Place beaten eggs in a separate bowl.

Step 3

Dip the pork schnitzel in the whisked eggs, then dip in the pork rind mixture to cover well. Shake the excess off.

Step 4

Place seasoned schnitzels in the air fryer basket. Spray with cooking spray. Fry at 350 F (175 C) for 14 minutes, or until golden and crispy, flipping halfway through.

Step 5

Serve hot.
