Ingredients
- 1 pound (480 g) baby potatoes, chopped
- 6 large eggs, beaten
- 2 teaspoons extra-virgin olive oil
- sea salt
Method
Step 1
In a large mixing bowl, combine chopped potatoes, salt, and extra-virgin olive oil. Toss well.
Step 2
Transfer oiled and seasoned potatoes to the air fryer basket. Fry at 360 F (180 C) for 17 minutes.
Step 3
In another mixing bowl, place the beaten eggs. Add a little salt and whisk with a fork.
Step 4
When the air fryer beeps, transfer potatoes into a silicone pan. Pour the egg mixture over, making sure all the potatoes are covered in the egg mixture.
Step 5
Place the silicone pan in the air fryer basket. Fry at 320 F (160 C) for 17 minutes, then switch the temperature to 360 F (180 C) and cook for a further 5 minutes.
Step 6
Flip the omelette over, spray with extra-virgin olive oil and cook for a further 5 minutes at 360 F (180 C). Serve hot.
