Makes 8 servings

Ingredients: 1/2 cup (125 ml) mayonnaise, 1/2 cup (125 ml) sour cream, 2 tablespoons (30 ml) horseradish mustard, 2 teaspoons (10 ml) chopped chives, 6 medium potatoes, peeled and cut into quarters, 6 medium carrots, peeled and cut into 2-inch (5 cm) lengths, 1 large yellow onion, peeled and quartered, 3 cloves garlic, peeled and chopped, 1 corned beef brisket (3-3½ pounds (1.44-1.7 kg)), fat trimmed, 2 teaspoons (10 ml) dried dill seeds, 1 teaspoon (5 ml) dried rosemary leaves, 1/2 teaspoon (3 ml) salt, 2 cans (14 oz (420 ml) each) reduced-sodium fat free beef broth, 1 small head cabbage, cut into 8 wedges

Instructions: In a small mixing bowl, combine mayonnaise, sour cream, horseradish mustard, and chopped chives. Stir well. Cover with a plastic wrap and refrigerate for at least 5 hours.

Meanwhile, place potatoes, carrots, onion, and garlic in 5-6-quart (5-6 L) crock pot. Top with beef brisket (if necessary, cut meat to fit into crock pot). Sprinkle with dried dill seeds, rosemary, and salt. Pour beef broth over seasoned meat.

Cover crock pot and cook on low-heat setting for 11-12 hours. Increase heat to high, then open the lid and add cabbage wedges, pushing them down into liquid. Cover crock pot and cook for further 30-60 minutes or until cabbage is cooked through.

Turn off crock pot and open the lid. Using tongs, remove cooked beef brisket from cooker and transfer to cutting board. Thinly slice brisket across the grain. Place sliced beef on a serving plate. Using a slotted spoon, remove cooked vegetables from the crock pot and transfer to the same serving plate. Serve reserved sauce with beef and vegetables.
