Crock Pot New England Boiled Dinner Recipe
Corned beef brisket with mayonnaise, horseradish mustard, vegetables, and herbs cooked in a crock pot. On a chilly day, this crock pot version of the famous one-pot meal will warm you a lot.
Makes 8 servings
Ingredients: 1/2 cup (125 ml) mayonnaise, 1/2 cup (125 ml) sour cream, 2 tablespoons (30 ml) horseradish mustard, 2 teaspoons (10 ml) chopped chives, 6 medium potatoes, peeled and cut into quarters, 6 medium carrots, peeled and cut into 2-inch (5 cm) lengths, 1 large yellow onion, peeled and quartered, 3 cloves garlic, peeled and chopped, 1 corned beef brisket (3-3Β½ pounds (1.44-1.7 kg)), fat trimmed, 2 teaspoons (10 ml) dried dill seeds, 1 teaspoon (5 ml) dried rosemary leaves, 1/2 teaspoon (3 ml) salt, 2 cans (14 oz (420 ml) each) reduced-sodium fat-free beef broth, 1 small head cabbage, cut into 8 wedges
Instructions: In a small mixing bowl, combine mayonnaise, sour cream, horseradish mustard, and chopped chives. Stir well. Cover with a plastic wrap and refrigerate for at least 5 hours.
Meanwhile, place potatoes, carrots, onion, and garlic in a 5-6-quart (5-6 L) crock pot. Top with beef brisket (if necessary, cut meat to fit into crock pot). Sprinkle with dried dill seeds, rosemary, and salt. Pour beef broth over seasoned meat.
Cover crock pot and cook on a low-heat setting for 11-12 hours. Increase heat to high, then open the lid and add cabbage wedges, pushing them down into the liquid. Cover crock pot and cook for further 30-60 minutes or until cabbage is cooked through.
Turn off the crock pot and open the lid. Using tongs, remove the cooked beef brisket from the cooker and transfer it to a cutting board. Thinly slice brisket across the grain. Place sliced beef on a serving plate. Using a slotted spoon, remove cooked vegetables from the crock pot and transfer them to the same serving plate. Serve reserved sauce with beef and vegetables.

Ingredients
- 3Β½ pounds (1.7 kg) corned beef brisket, fat trimmed
- 2 pounds (960 g) Yukon gold potatoes, peeled and chunked
- 2Β½ cups (625 ml) baby carrots
- 12 oz (360 ml) Guinness beer
- 1/4 cup (60 ml) brown sugar
- seasoned packet, which came with corned beef
- 1 small head cabbage, cut into 4 wedges
Method
Step 1
Place trimmed beef in the crock pot. Sprinkle with brown sugar and seasonings. Pour beer around the meat, then place chunked potatoes and baby carrots around the beef.
Step 2
Cover crock pot and cook on a low-heat setting for 8-10 hours.
Step 3
Open the lid. Place cabbage wedges around cooked beef. Close crock pot and cook for a further 20 minutes.
