Boneless and skinless chicken breasts and vegetables cooked in cider and seasoned with honey and vinegar for a refreshing sweet-sour flavor. Very delicious!

Makes 4 servings

Ingredients: 1 pound (480 g) boneless and skinless chicken breast, cut into cubes, 1/2 cup (125 ml) apple cider, 4½ oz (135 ml) can diced tomatoes, undrained, 2 cups (500 ml) peeled and cubed butternut squash, 1 cup (250 ml) each: peeled and cubed Idaho and sweet potatoes, whole-kernel corn, 1/2 cup (125ml) each: chopped fresh shallots, red bell pepper, seeded and sliced, 2 cloves garlic, peeled and minced, 1½ tablespoons (22 ml) each: clear honey, cider vinegar, 1 bay leaf, 1/4 teaspoon (1 ml) ground nutmeg, 1 cup (250 ml) tart apples, peeled, cored, and sliced, salt and freshly ground black pepper, to taste, 4 cups (1 L) cooked basmati rice, warm

Instructions: In 4-6-quart (4-6 L) slow cooker, combine all ingredients, except salt, black pepper, and rice. Stir well. Cover crock pot and cook on low-heat setting for 5-6 hours, adding sliced apples during last 20 minutes.

Turn off slow cooker and open the lid. Discard bay leaf. Season to taste with salt and black pepper. Stir well. Remove chicken and vegetable stew from the slow cooker and transfer to serving plates. Serve over cooked rice.

Crock Pot Lemon-Garlic Chicken Breasts Recipe

Ingredients

  • 1 teaspoon dried oregano
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 boneless and skinless chicken breasts
  • 2/3 cup (160 ml) reduced-sodium fat-free chicken broth
  • 2 oz (60 ml) freshly squeezed lemon juice
  • 4 cloves garlic, peeled and minced
  • 4 small potatoes, peeled and quartered

Method

Step 1

Place potatoes in the slow cooker.

Step 2

Rub dired oregano, garlic, salt, and black pepper into chicken breasts. Top potatoes with seasoned chicken breasts. Pour chicken broth over chicken and potatoes.

Step 3

Cover crock pot and cook on low-heat setting for 6 hours.

Step 4

Turn off crock pot and open the lid. Transfer cooked chicken and potatoes to serving plates. Serve hot.
